Garlic

Our garlic is grown very naturally. It is mulched very heavily to help suppress weeds and retain moisture. We do not use any herbicides or pesticides and it is all hand weeded. 

Garlic makes a wonderfully versatile seasoning, adding a robust flavour to many different dishes. It can be eaten raw, cooked or roasted. We have 5 different varieties to meet a range of garlic needs. 

Italian Purple: In the purple stripe family and generally has 8-10 cloves per bulb and stores well. It has a purple and brown wrapping on the cloves and a rich and strong flavour that sticks around. It is especially good roasted.
Russian Red: In the purple stripe family and generally has 8-12 cloves per bulb and stores well. It has a browny pink to purple striped wrapping. It is fiery when eaten raw and has a smooth flavour when cooked.
Spanish Roja: In the rocambole family and generally has 8-10 cloves per bulb and stores well. It has a maroon-brown coloured wrapping. It has a deep, rich and complex flavour. 
Marino: In the rocambole family and generally has 6-8 large cloves per bulb and stores well. It has a purple striped wrapping. It has a sharp flavour without the heat when raw and some sharpness when cooked. Especially good raw. 
Music: It is in the porcelain family and stores especially well. It is also known as "elephant garlic" due to the large size of cloves. It has 3-6 extra large cloves per bulb in a yellowish tan wrapping. Tends to be mild when cooked, sweet when baked and hot when raw. 

If you are wanting garlic flavour before the garlic season is underway we also harvest and sell the scapes. If left on the garlic plant they would become the flower shoot. The scapes are great cooked, pickled or preserved. We especially enjoy our garlic scape pesto!
